When you plug your iPod in, it brings its management page which you can see within the “Device” menu on the left menu of iTunes. In this manager you see your summary where your iPod is shown in a picture. In here you can navigate through tabs. In the music tab you need to uncheck “Sync music”. iTunes will ask for confirmation and there you go.
