When you plug your iPod in, it brings its management page which you can see within the “Device” menu on the left menu of iTunes. In this manager you see your summary where your iPod is shown in a picture. In here you can navigate through tabs. In the music tab you need to uncheck “Sync music”. iTunes will ask for confirmation and there you go. To delete songs just navigate to your music within the iPod in the “Device” menu in the left. There you can select individually and in group the songs you want to delete or move (drag) into a playlist.
